Bacon-Teff Pancakes with Sweet Potato and Pear Hash

Teff, a whole grain with a sweet, molasses-like flavor, adds iron and calcium to these bacon-swirled pancakes.

Ingredients

  • 1 ¼ cup all-purpose flour

  • ½ cup teff

  • 1 tablespoon sugar

  • 1 tablespoon baking powder

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • 1 egg, lightly beaten

  • 1 ½ cup buttermilk

  • 6 slices (4 ounces) lower sodium less fat bacon, crisp-cooked and crumbled

  • ¼ cup thinly sliced green onions (2)

  • 3 tablespoon canola oil

  • 1 recipe Sweet Potato and Pear Hash

  • ¼ cup chopped toasted walnuts

Sweet Potato and Pear Hash

  • 1 medium (7 ounce) sweet potato, peeled and chopped (1 1/4 cups)

  • ½ of a medium sweet onion, thinly sliced (1/2 cup)

  • 1 tablespoon butter

  • 2 medium pears or apples, cored and chopped (2 1/2 cups)

  • 1 cup apple cider or apple juice

  • teaspoon salt

  • teaspoon ground black pepper

  • ½ teaspoon snipped fresh thyme

Directions

  1. In a large bowl stir together flour, teff, sugar, baking powder, baking soda, and salt. In a medium bowl whisk together egg, buttermilk, bacon, onions, and oil. Add buttermilk mixture all at once to flour mixture. Stir just until moistened. (Batter should be slightly lumpy.)

  2. Pour about 1/3 cup batter onto a hot greased griddle or heavy skillet. Spread batter if necessary. Cook over medium heat for 1 1/2 to 2 minutes per side or until pancakes are lightly brown; turn over when surfaces are bubbly and edges are slightly dry. Serve warm with Sweet Potato and Pear Hash. Sprinkle with walnuts.

Sweet Potato and Pear Hash

  1. In a large skillet cook sweet potato and onion in butter over medium heat for 6 to 8 minutes or until nearly tender, stirring occasionally. Add pears, apple cider, salt, and pepper. Bring to boiling over medium-high heat. Boil gently, uncovered, for 5 minutes or until cider is slightly reduced, stirring occasionally. Stir in thyme.
