In a medium bowl whisk together egg, buttermilk, bacon, onions, and oil. Add buttermilk mixture all at once to flour mixture. Stir just until moistened. (Batter should be slightly lumpy.) Pour about 1/3 cup batter onto a hot greased griddle or heavy skillet. Spread batter if necessary. Cook over medium heat for 1 1/2 to 2 minutes per side or until pancakes are lightly brown; turn over when surfaces are bubbly and edges are slightly dry. Serve warm with Sweet Potato and Pear Hash. Sprinkle with walnuts. Sweet Potato and Pear Hash In a large skillet cook sweet potato and onion in butter over medium heat for 6 to 8 minutes or until nearly tender, stirring occasionally. Add pears, apple cider, salt, and pepper. Bring to boiling over medium-high heat. Boil gently, uncovered, for 5 minutes or until cider is slightly reduced, stirring occasionally. Stir in thyme.
