Bacon-Roasted Sweet Potatoes and Shallots with Blistered Grapes
Preheat oven to 425 degrees F. In a large skillet cook bacon over medium heat until crisp. Drain bacon on paper towels, reserving 3 Tbsp. drippings in skillet. Heat a 15x10-inch baking pan in oven 5 minutes.
In a large bowl combine sweet potatoes and shallots. Drizzle with reserved drippings and sprinkle with salt and pepper; toss to coat. Transfer mixture to heated pan.
Roast 30 minutes or until potatoes are tender, stirring once and adding grapes the last 5 minutes. Sprinkle with bacon.
