In a large skillet cook bacon until crisp; remove to paper towels to drain, reserving 1 Tbsp. drippings in skillet. Add the olive oil to skillet; add shallots and a pinch of salt. Cook over medium heat 3 to 4 minutes or until shallots are soft and golden brown, stirring occasionally. Stir in vinegar; remove from heat. Scrape up browned bits from bottom of skillet.
Place greens in a large bowl. Pour warm dressing over; toss to coat. Season to taste with salt and pepper. Cut bacon into 1-inch pieces. Add bacon, grain, and pears to greens mixture; toss to coat. Top with cheese.
