Ingredients

  • 2 thin slices deli ham

  • 1 avocado, halved and pitted

  • 2 eggs

  • ½ teaspoon everything bagel seasoning

Directions

  1. Preheat oven to 425°F. Coat a 9-inch loaf pan with nonstick cooking spray. Pat ham slices with paper towel to dry.

  2. Scoop out enough of the flesh of each avocado half to leave 1/2-inch shell*. Place a slice of ham in each half and gently press to secure to avocado; place in prepared pan. Crack egg into each avocado cup. Loosely cover pan with foil.

  3. Bake about 15 minutes or until egg white is set and yolk is of desired consistency. Sprinkle each serving with seasoning.

Make your Own

If you can't find bagel seasoning at your local grocery, make your own! Combine 1 teaspoon each sesame seeds and poppy seeds, 1/2 teaspoon each dried minced onion and dried minced garlic, and 1/4 teaspoon each kosher salt and dried lemon peel.

Mash the extra avocado flesh with some lemon juice, salt, and pepper for a quick guacamole.
