Avocado Egg Bake

Directions

  1. Preheat oven to 425 degrees F. Coat a 9-inch loaf pan with nonstick cooking spray. Pat ham slices with paper towel to dry.
  2. Scoop out enough of the flesh of each avocado half to leave 1/2-inch shell*. Place a slice of ham in each half and gently press to secure to avocado; place in prepared pan. Crack egg into each avocado cup. Loosely cover pan with foil.
  3. Bake about 15 minutes or until egg white is set and yolk is of desired consistency. Sprinkle each serving with seasoning.

Make your Own

If you can't find bagel seasoning at your local grocery, make your own! Combine 1 teaspoon each sesame seeds and poppy seeds, 1/2 teaspoon each dried minced onion and dried minced garlic, and 1/4 teaspoon each kosher salt and dried lemon peel.

Mash the extra avocado flesh with some lemon juice, salt, and pepper for a quick guacamole.

How is one supposed to eat this? You can NOT eat without dumping ham and egg out of AVACADO because you have to CUT the ham,so you end up with something that looks SO UNAPPETIZING that our first thought was to dump out! The tast was, thought, very good but willNOT BE MAKING AGAIN! Maybe some of your test kitchen persons shoul try the recipes you suggest BEFOR you print!

Very tasty but be sure to use a large avocado and and a small egg otherwise your egg will keep sliding out!
