Split a 100% whole wheat thin sandwich roll. Coat uncut sides with nonstick cooking spray. Spread cut sides of roll with 2 light creamy Swiss individually foil-wrapped spreadable cheese wedges. Layer 1/3 cup roasted red peppers and 1/4 cup fresh baby arugula leaves on one roll half. Top with second roll half, spread side down; press gently. Place the filled sandwich in a preheated Panini grill or hot skillet. Cook for 3 to 4 minutes or until golden brown, turning once if using a skillet.
