Artichoke Bean Dip

Directions

  1. In a food processor combine the first seven ingredients (through cayenne pepper). Cover and process until nearly smooth, stopping to scrape down sides as needed. Transfer to a serving bowl.
  2. Cover and serve within 2 hours. (Or cover and chill up to 24 hours. Let stand at room temperature about 1 hour before serving.)
  3. Sprinkle lightly with additional salt and top with roasted pepper strips and basil. Serve dip with pita chips.

This easy dip is also delicious topped with chopped Kalamata olives and a sprinkling of crumbled feta cheese.
