Artichoke and Green Onion Hummus

Hummus recipes can be used as so much more than dips. Try as a spread on sandwiches, use it in pasta sauce, top a flatbread, stuff it in a mushroom, or spread it on a bagel. This hummus recipe is unique in that it uses cannellini beans instead of traditional chickpeas.

Artichoke and Green Onion Hummus

Directions

  1. In a food processor or blender combine the first nine ingredients (through garlic). Cover and process or blend about 4 minutes or until very smooth, stopping and scraping sides as necessary.
  2. Transfer hummus to a small serving bowl. If desired, drizzle with the 2 to 3 tsp. olive oil, additional green onion, and/or grated Parmesan cheese. Serve with pita wedges and/or vegetable dippers.
