Apple-Zucchini Smoothies

Ingredients

  • 4 small cooking apples, peeled, cored, and thinly sliced

  • 1 medium zucchini, cut into 1-inch pieces

  • 1 cup small broccoli florets

  • 2 cup lime sherbet

  • 1 cup Greek yogurt

  • 2 tablespoon honey

  • Ice cubes

  • Milk

Directions

  1. Place apples, zucchini, and broccoli in a steamer basket in a large saucepan. Add water to saucepan to just below the basket. Bring to boiling. Steam, covered, for 8 to 10 minutes or until very tender. Remove from heat; cool completely.

  2. Transfer apple mixture to a blender. Add sherbet, yogurt, and honey. Cover and blend until smooth, stopping to scrape down sides as needed. Add ice cubes; cover and blend until smooth.*

  3. Pour mixture into an ice cube tray and freeze overnight until firm. Transfer smoothie cubes to a 1-gallon freezer bag; seal and freeze for up to 6 months.

  4. To serve, in a blender combine 6 smoothie cubes and 3 tablespoons milk per serving. Cover and blend until smooth. Pour into tall glasses and serve immediately.

If desired, add 3/4 cup milk to the pureed mixture. Cover and blend until smooth. Pour into tall glasses and serve immediately.
