In a large bowl beat butter with a mixer on medium to high 30 seconds. Add both sugars, baking powder, baking soda, and salt. Beat until combined, scraping bowl as needed. Beat in eggs and vanilla. Beat in flour. Stir in the apples, toffee bits, and pecans. Drop dough by teaspoons 2 inches apart onto ungreased cookie sheets. Bake 7 to 9 minutes or until edges are lightly browned. Cool on cookie sheet 2 minutes. Remove; cool on wire racks. To Store Layer cookies between sheets of waxed paper in an airtight container; cover. Store at room temperature up to 2 days or freeze up to 3 months.
