Grease an extra-large baking sheet. In a large skillet cook bacon over medium heat until crisp. Drain on paper towels, reserving 2 Tbsp. drippings in skillet (reserve any remaining drippings). Add apples to drippings in skillet; cook 5 minutes, stirring to scrape up any browned bits. Carefully stir in wine, thyme, and pepper. Bring to boiling; reduce heat. Simmer, uncovered, 6 to 7 minutes or until liquid is evaporated, stirring occasionally. On a lightly floured surface, roll pizza dough into a 15x11-inch rectangle (let dough rest during rolling, if necessary). Place on prepared baking sheet and reshape. Brush with any reserved bacon drippings or olive oil. Spread dough with apple mixture to within 1/2 inch of the edges; sprinkle with cheese. Bake 10 minutes. Sprinkle pizza with bacon; bake 5 to 10 minutes more or until crust and toppings are golden. Top with walnuts and green onions. If desired, sprinkle with additional cheese and drizzle with honey.
