Apple-Maple Snack Cake

This easy snack cake recipe is better for you than classic blondies. This recipe has maple syrup, almonds, and fresh apples, making it a great sweet treat.

Ingredients

  • 1 cup white whole wheat flour

  • 1 teaspoon baking powder

  • ¾ teaspoon apple pie spice

  • ¼ teaspoon salt

  • cup packed brown sugar

  • ¼ cup pure maple syrup

  • ¼ cup butter, melted

  • 1 egg

  • 2 teaspoon vanilla

  • 1 ½ cup peeled and chopped Braeburn or other cooking apples

  • ¼ cup sliced almonds

Directions

  1. Preheat oven to 350°F. Grease an 8-inch square baking pan. In a medium bowl stir together first four ingredients (through salt).

  2. In another medium bowl combine brown sugar, maple syrup, and melted butter. Stir in egg and vanilla. Stir in flour mixture just until combined. Fold in apples. Spread batter in prepared pan. Sprinkle with almonds.

  3. Bake 20 to 23 minutes or until a toothpick comes out clean. Cool in pan on a wire rack.
