Apple-Maple Snack Cake

Directions

  1. Preheat oven to 350 degrees F. Grease an 8-inch square baking pan. In a medium bowl stir together first four ingredients (through salt).
  2. In another medium bowl combine brown sugar, maple syrup, and melted butter. Stir in egg and vanilla. Stir in flour mixture just until combined. Fold in apples. Spread batter in prepared pan. Sprinkle with almonds.
  3. Bake 20 to 23 minutes or until a toothpick comes out clean. Cool in pan on a wire rack.
