Apple Jelly

Directions

  1. Remove and discard apple stems and blossom ends. Cut apples into small pieces (do not peel or core). Place apple pieces in an 8-quart heavy pot; add the water. Bring to boiling; reduce heat. Simmer, covered, 10 minutes. Using a potato masher or the back of a large spoon, crush cooked apples. Simmer, covered, 5 minutes more, stirring occasionally. Line an extra-large strainer with 100-percent-cotton cheesecloth; place over an extra-large bowl. Pour apple mixture into strainer. Strain until dripping stops (about 2 hours). Press apple mixture gently with the back of a spoon. Measure 7 cups juice. (If you don't have 7 cups juice, add enough bottled apple juice to make 7 cups.) Return juice to the pot.
  2. Stir pectin into apple juice in pot. Bring to a full rolling boil, stirring constantly. Stir in sugar. Return to full rolling boil, stirring constantly. Boil hard 1 minute, stirring constantly.
  3. Ladle hot jelly into hot, sterilized half-pint canning jars, leaving a 1/4-inch headspace. Wipe jar rims; adjust lids and screw bands.
  4. Process filled jars in a boiling-water canner 5 minutes (start timing when water returns to boiling). Remove jars from canner; cool on wire racks.

Geranium-Apple Jelly

Prepare as directed, except after boiling 1 minute in Step 2, gently stir 6 edible scented geranium sprigs through the liquid for 30 seconds. Press the sprigs against the side of the pot to release all of their flavor. Remove sprigs from the juice mixture before ladling jelly into jars.

*Tip

Do not make jelly with all bottled apple juice or the jelly will be cloudy.
