Ingredients

  • 2 pound medium carrots, peeled and bias-sliced

  • ¾ - 1 cup minced shallots

  • ½ cup chicken broth

  • ½ teaspoon salt

  • ½ cup apple juice or cider

  • 1 tablespoon cornstarch

  • ¼ - ½ teaspoon ground cinnamon

  • Crisp-cooked bacon

Directions

  1. In a 3 1/2- or 4-quart slow cooker combine carrots, shallot, broth, and salt. Cover and cook on low for 5 to 6 hours or on high for 2 1/2 to 3 hours.

  2. If using low, turn to high. In a small bowl stir together apple juice, cornstarch, and cinnamon; stir into carrots. Cover and cook 45 minutes more or until thickened and bubbly. Sprinkle with bacon before serving.

For Easy Cleanup:

Line your slow cooker with disposable slow cooker liner. Add ingredients as directed in recipe. Once your dish is finished cooking, spoon the food out of your slow cooker and simply dispose of the liner. Do not lift or transport the disposable liner with food inside.
