Directions

  1. In a large bowl combine flour, the 1/2 cup flax seed meal, the granulated sugar, baking powder, the 1 teaspoon cinnamon, the salt, and baking soda. In a medium bowl beat one of the eggs with a whisk. Whisk in applesauce, buttermilk, melted butter, and vanilla. Stir in dried apples.
  2. Add egg mixture all at once to flour mixture. Stir with a fork just until combined. Using floured hands, gather dough into a ball. Place in a lightly greased bowl, turning once to grease surface of dough. Cover and chill for at least 3 hours or up to 24 hours.
  3. Preheat oven to 375 degrees F. Line baking sheets with parchment paper; set aside. In a small bowl combine the remaining one egg and the milk. Turn out dough onto a lightly floured surface. Divide dough into 12 equal portions. Roll each dough portion into a 14-inch-long rope.
  4. Fold each rope in half, end to end; twist several times. Brush egg-milk mixture onto the twist; lightly sprinkle with the flax seed-cinnamon mixture and/or turbinado sugar. Arrange twists 2 inches apart on prepared baking sheets. Bake for 12 to 15 minutes or until tops are golden brown. Transfer to a wire rack; cool slightly. Serve warm.

To make 1/3 cup sour milk, place 1 teaspoon lemon juice or vinegar in a glass measuring cup. Add enough fat-free milk to make 1/3 cup total liquid; stir. Let stand for 5 minutes before using.
