Directions

  1. Prepare the broiler, skillet, or baking stone for broiling. Prepare pizza dough.
  2. When ready to assemble pizza, measure and have ready all topping ingredients. Scatter tomatoes on dough, season with salt and pepper to taste, then quickly add the mozzarella pieces.
  3. Broil for 5 to 8 minutes, or until the crust has puffed around the edges and blackened in spots.
  4. Remove the pizza with a wooden or metal peel or baking sheet. Transfer it to a cutting board. Let it rest a few minutes. Sprinkle the pizza with basil, drizzle olive oil on top, and cut pizza in quarters to serve.
