This is an occasion where simpler is better. The sweet flavor of asparagus is heightened when it is roasted quickly and showered with Parmesan cheese.

Ingredients

  • 1 pound fresh asparagus, trimmed

  • teaspoon ground black pepper

  • 1 tablespoon olive oil

  • 3 tablespoon grated Parmesan cheese

Directions

  1. Preheat oven to 450F. Place asparagus in a 2-quart baking dish. Sprinkle with pepper. Drizzle with olive oil. Toss lightly to coat. Roast, uncovered, in the preheated oven about 15 minutes or until crisp-tender, lightly tossing twice during roasting. Transfer asparagus to a warm serving platter. Sprinkle with cheese. Makes 4 servings.
