- Cut the ham slices in half diagonally, making 16 pieces. If desired, cut up large pieces of potato in potato salad. Spread about 1 tablespoon potato salad on each ham strip, leaving a small border of ham around the potato salad. Place a pimiento slice or row of pimiento pieces and, if desired, fresh chives crosswise atop the potato salad.
- Roll up, starting at wide end of the ham strip. If desired, place on serving plate lined with salad greens. Repeat with remaining ham, potato salad, pimiento, and chives. Cover and chill until serving time. Makes 16 spirals, 8 servings.
