• In a small bowl, combine goat cheese, honey, and lemon peel.

  • Divide half of the cheese mixture among four bread slices, spreading to edges. Top with half of the fig jam; add half of the basil. Top with four more bread slices. Top with the remaining cheese mixture and the remaining fig jam; add the remaining basil. Top with the remaining four bread slices. Lightly coat the outsides of sandwiches with cooking spray.

  • Coat a large skillet with cooking spray; heat over medium heat. Add sandwiches; cook about 6 minutes or until lightly toasted, turning once. Cut each sandwich in half. Makes 8 servings.
