Caprese Bruschetta


When you're craving Italian food but are short on time, turn to this easy bruschetta recipe. Top with extra shredded basil to finish this bruschetta caprese appetizer on a fresh note.

  • 2 medium tomatoes, seeded and chopped

  • cup mozzarella cheese cut into small cubes

  • ¼ cup finely chopped red onion

  • 2 tablespoon shredded fresh basil

  • 2 teaspoon olive oil

  • 1 teaspoon balsamic vinegar

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • 12 slices whole grain baguette, toasted


  1. In medium bowl combine tomatoes, cheese, red onion, basil, oil, balsamic vinegar, salt, and pepper. Serve immediately or cover and chill for up to 24 hours.

  2. To serve, spoon tomato mixture onto toasted baguette slices. Makes 4 servings.
