Blue Cheese-Ricotta Dip

Simple and sumptuous, serve this blue cheese and ricotta dip with green apple slices, crackers, and breadsticks. For kids who might find the blue cheese too strong, serve wedges of cheddar with the apple.

I spent $13.00 on a piece of Matag Blue but after all was mixed all I could taste was the Ricotta:( Had to go out and buy more to add for flavor. That makes for the most expensive spread I've ever made - nearly $40 when you add the apple cider. I think cutting the Ricotta in half might work since I had to add twice the blue cheese to get any flavor.
