  • Beat butter in a medium bowl with an electric mixer on medium speed for 30 seconds. Stir in Romano or Parmesan cheese, flour, rosemary or sage, lemon peel, and pepper until combined (mixture will be crumbly). Stir in egg. Form into a ball with your hands. Shape into a 9-inch-long log. Wrap tightly in plastic wrap and chill for 2 hours or until firm.

  • To serve, cut into 1/8-inch-thick slices with a sharp knife and place on an ungreased baking sheet. Top with 1/4 to 1/2 teaspoon of desired topping. Bake in a 425 degree F oven for 6 to 8 minutes or until golden. Makes about 60.


Refrigerate unbaked dough wrapped tightly in plastic wrap up to 1 week or freeze up to 6 months. To serve, thaw in refrigerator before slicing and baking as directed above.
