Directions

  1. Coat a large baking sheet with cooking spray; set aside.
  2. In a small bowl combine cornflake crumbs, Romano cheese, garlic powder, and ground red pepper. In another small bowl beat together egg whites and water.
  3. Dip squash, cauliflower, and mushrooms in egg white mixture and coat with crumb mixture. Place in a single layer on the prepared baking sheet. Bake in a 400 degree F oven for 8 to 10 minutes or until vegetables are crisp-tender and coating is golden brown.
  4. Meanwhile, in a small saucepan cook and stir pizza sauce over low heat until heated through. [Or place sauce in a microwave-safe bowl. Microwave on 100-percent power (high) for 45 to 60 seconds.] Serve the warm vegetables with pizza sauce for dipping. Makes 8 servings.
