Appetizer Albondigas

Directions

  1. Preheat oven to 425 degrees F. In a large bowl combine the first eight ingredients (through salt). Add beef and pork; mix well.
  2. Shape meat mixture into 32 meatballs. Place meatballs 1/2 inch apart in a 15x10x1-inch baking pan. Bake, uncovered, 12 to 15 minutes or until done (160 degrees F).
  3. Arrange tortilla chips on a clean baking pan. Place meatballs on tortilla chips; sprinkle with cheese. Bake 2 to 3 minutes or until cheese melts. Serve with salsa.
