Lightly coat a 1- to 1 1/2-qt. casserole or other oven-safe dish* with cooking spray. Place bread cubes in air-fryer basket; cook 12 to 15 minutes or until dried and lightly golden, tossing occasionally. Meanwhile, in a 10-inch skillet melt butter over medium heat. Add next three ingredients (through apple). Cook 6 to 8 minutes or just until tender, stirring occasionally. In a large bowl combine bread cubes, fennel mixture, and next five ingredients (through pepper). Add enough broth to moisten. Spoon bread mixture into prepared dish. Cover with foil. Place dish in air-fryer basket; cook 15 minutes. Remove foil and continue cooking 6 to 8 minutes or until golden brown and crisp on top. Let stand 5 minutes before serving. * If you can't find a casserole to fit in your air fryer, divide mixture among individual 10- to 12-ounce casserole dishes. Cook as above. Cook over medium-low heat until fragrant and golden brown, stirring frequently. When the pine nuts are golden brown, immediately transfer them to a plate to stop the cooking.
