In a large bowl beat butter with a mixer on medium 30 seconds. Add 1 1/2 cups sugar, baking soda, cream of tartar, and salt. Beat 1 to 2 minutes or until light and fluffy, scraping bowl as needed. Beat in eggs and vanilla. Beat in flour. In a small bowl stir together 1/4 cup sugar and cinnamon. Divide dough into 1/4-cup portions and shape into balls. Roll each ball in cinnamon-sugar and flatten to 1/2-inch thickness. Place dough portions on 4-inch squares of parchment paper and arrange two or three at a time, in air-fryer basket. Cook 6 to 8 minutes or until golden. Remove with a wide spatula; cool on a wire rack. Mini Cookie Pizzas Preheat air fryer at 360°F. Prepare dough as directed and divide into seven 1/2-cup portions. Shape into balls and roll in cinnamon-sugar. On a 6-inch piece of foil, flatten one ball of dough to a 5-inch circle. Place in air-fryer basket and cook 6 to 8 minutes or until golden. Using foil, lift out pizza. Cool on foil on a wire rack. Repeat with remaining dough portions. Makes 7 mini pizzas. To Store Line a tray or baking sheet with parchment paper. Arrange coated dough mounds on prepared tray. Freeze 2 hours or until firm. Transfer to an airtight container and freeze up to 3 months. Thaw before cooking.
