Air-Fryer Rosemary Garlic Baby Potatoes

This air-fryer potato recipe gets those baby spuds nice and crispy on the outside and creamy on the inside. A sprinkle of lemon zest at the end gives them a nice citrus finish.

Ingredients

  • 1 ½ pound multi-colored new potatoes, halved or quartered, if large

  • 2 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon finely chopped fresh rosemary

  • ½ teaspoon kosher salt

  • ½ teaspoon lemon zest

Directions

  1. In a large bowl toss together potatoes, oil, garlic, rosemary, and salt. Working in batches, if necessary, arrange potatoes in a single layer in air fryer basket. Do not overcrowd. Cook at 400°F for 20 minutes or until potatoes are golden brown and tender. Sprinkle with lemon zest before serving.
