Air-Fried Zucchini Chips

Air frying zucchini chips let's you enjoy the same crispy coating without all the added fat. They make an excellent healthy snack or appetizer recipe.

Ingredients

  • 2 tablespoon all-purpose flour

  • ¼ teaspoon salt

  • teaspoon pepper

  • 1 egg, lightly beaten

  • 1 ½ teaspoon water

  • cup panko bread crumbs

  • 2 tablespoon grated Parmesan cheese

  • ½ teaspoon chili powder

  • ¼ teaspoon garlic salt

  • 1 medium zucchini, sliced 1/2-inch thick

  • Marinara sauce, warmed

Directions

  1. Preheat air fryer to 400°F. In a shallow dish combine flour, salt, and pepper. In another shallow dish combine the egg and water. In a third shallow dish combine the panko, Parmesan, chili powder, and garlic salt. Dip zucchini slices in flour mixture, then egg mixture, then panko mixture to coat.

  2. Arrange slices in air fryer basket in a single layer. Cook in batches for 7 to 9 minutes or until golden, turning once*. Serve warm with marinara.

If frying multiple batches:

Preheat oven to 200°F. Place a wire rack on a baking sheet. Transfer fried zucchini chips to wire rack and keep warm in oven until ready to serve.
