Air-Fried Soy Ginger Shishito Peppers

This East Asian pepper is an excellent nutritious snack packed with antioxidants and vitamins such as A, C, and K.

Ingredients

  • 1 pint shishito peppers (6 oz., about 20)

  • 1 teaspoon vegetable oil

  • 1 tablespoon less-sodium soy sauce

  • 1 tablespoon fresh lime juice

  • 1 teaspoon honey

  • ½ teaspoon grated fresh ginger

Directions

  1. In a medium bowl toss peppers with oil to coat. Place peppers in air fryer basket. Cook at 390°F for 6 to 7 minutes or until blistered and tender, shaking basket halfway through.

  2. Meanwhile, in the same medium bowl combine soy sauce, lime juice, honey and ginger. Add cooked peppers and toss to coat. Serve warm.

Tips

These roasted peppers make a great side for a grilled steak. If you prefer to serve as an appetizer, you can plan on 8 appetizer servings.
