Air-Fried Brussels Sprouts

Ingredients

  • 1 pound Brussels sprouts, trimmed and halved, or quartered if large

  • 2 tablespoon vegetable oil

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • cup mango nectar

  • ¼ cup rice vinegar

  • ¼ cup packed brown sugar

  • 1 tablespoon reduced-sodium soy sauce

  • 2 teaspoon cornstarch

  • 1 ½ teaspoon fish sauce

  • 1 teaspoon Asian chile sauce

Directions

  1. Preheat air-fryer to 375°F. In a large bowl toss Brussels sprouts with oil, salt, and pepper. Working in batches, if necessary, arrange Brussels sprouts in a single layer in air fryer basket (don't overcrowd). Cook for 10 to 12 minutes or until sprouts are browned and tender, shaking or stirring once.

  2. Meanwhile, for sauce, in a small saucepan combine the mango nectar, rice vinegar, brown sugar, soy sauce, cornstarch, fish sauce, and chile sauce. Cook and stir until thickened and bubbly. Cook and stir 2 minutes more.

  3. Serve sprouts with sauce.
