5-Minute Dipping Sauce

Directions

  1. In a blender or food processor combine 1/2 cup olive oil, 2 tablespoons grated Parmesan cheese, 2 tablespoons snipped fresh flat-leaf Italian parsley, 2 tablespoons whole grain mustard, and 1 teaspoon smoked paprika. Cover and blend or process for at least 1 minute or until well mixed.

Uses

Dip chunks of whole grain bread, pita wedges, or vegetable sticks into the dipping sauce. Brush it over vegetables or chicken before grilling. Drizzle it over mashed potatoes, cauliflower, or sweet potatoes.
