A little cornstarch is the secret to achieving the perfect creamy-yet-firm texture. To keep it gluten-free, be sure to use gluten-free vanilla extract. Serve this gluten-free pumpkin pie with a dollop of whipped cream. Ingredients 1 spray , about 1/3 second cooking spray 15 ounces pumpkin puree (1 can) 1 cup half and half 1/2 cup packed brown sugar 2 large eggs 1 Tbsp. cornstarch 2 tsp. pumpkin pie spice 2 tsp. vanilla extract 1/2 tsp. ground cinnamon 1/2 tsp. salt 2 Tbsp. whipped cream Directions Preheat oven to 375°F. Lightly coat a 9-inch pie plate with nonstick spray. In a large bowl whisk together the next nine ingredients (through salt). Pour mixture into prepared dish. Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool pie on a wire rack 1 1/2 hour or until room temperature. Cover and chill at least 2 hours before serving. Serve topped with whipped cream (if desired).
