In this episode, the chef tackles fresh artichokes with a crab salad stuffing. "I have to point out that this recipe is in the vegetable section," she says. "Which is comical because this is mostly crab and mayonnaise." The retro recipe uses canned crab meat to make this process easier. Instead of mixing the mayo and lemon juice separately, deBoschnek opts for combining everything in the same bowl to avoid dirtying another dish. If you haven't cooked artichokes before, use this guide to help get them nice and tender before making this crab-stuffed recipe. Ingredients 2 cups, flaked and pieces canned crab meat 1 cup swiss cheese, cubed 1/3 cup green bell pepper 1/4 cup onion, finely chopped 1 tsp salt 1/2 cup mayonnaise 2 tsp lemon juice 5 medium artichokes, cooked Directions Shirley Cheng Break crab meat into chunks; toss with cheese, bell pepper, onion, and salt. Blend mayonnaise and lemon juice; add to crab mixture; toss lightly. Remove small center leaves of each artichoke, leaving a cup. Carefully remove choke. Fill artichokes with crab salad; place in large baking dish. Pour hot water around artichokes to depth of 1 inch. Cover and bake at 375ºF about 35 minutes or until heated through.
