For sugar cookies with a minty surprise inside, divide one roll of sugar cookie dough in half. Roll out both halves and trim the excess from the edges. Place 12 Andes mints, evenly spaced, on one rolled-out dough half. Using a rolling pin, place the other half of dough on top of the mints. Seal the edges and cut into squares. Bake according to package directions. After cookies are cool, dip half of each cookie into melted dark chocolate.
To add a pop of festive color to your cookie plate, pour 1/3 cup red sugar sprinkles onto a plate and 1/3 cup green sugar sprinkles on a different plate. Form dough into balls and roll each ball through one of the colors of sprinkles until coated. Bake according to package directions.
