Recognize this sauce? It's called Sriracha, otherwise known as rooster sauce. It used to be relegated to the back aisles of Asian markets, but nowadays you can find it in any supermarket in the Asian aisle. Sriracha has been around for decades but its surge in popularity recently, thanks to features online in magazines, newspapers, and even spots on TV including Top Chef and the Simpsons. It takes bright and fiery with a great balance of flavors, a little bit salty, a little bit sour and a little bit sweet. The secret to the great flavor in Sriracha is its simplicity. It's made with red peppers, garlic, vinegar, sugar, and a little salt. Home cooks and chefs alike love this special hot sauce to turbo-boost everything from mayo and ketchup to cream cheese and dip. Use it to create pecan glazes and sauces. For fun twist in chili con carne, just add it to taste. My personal favorite, Sriracha scrambled eggs. The thing about Sriracha is you can use it in place of your favorite hot sauce in any recipe. A really creative way to use Sriracha is in Bloody Marys. Use it in place to Tabasco. Just remember this stuff is pretty spicy so add a little at a time.
