Sausage Dinner Hoagie with Chef Scott Peacock

For a quick and easy weeknight dinner, try this sausage sandwich by Scott Peacock. The hearty recipe would also be great leftover for lunch the next day.

[MUSIC] Sandwich is always a hit, and this is a great one made with sausage. We're starting with a soft roll, not too thick of a crust, cuz we're gonna toast these and you don't wanna have to fight through that. These are nice and light, so we're gonna take just the top off, because we want a deeper bottom like that. And we're gonna hollow it out to make a little boat. Now, we're gonna brush these on the inside with a little bit of melted butter. [MUSIC] Then, we're gonna put these in a 425 oven for about five minutes until they're nice and gold and toasty. This sandwich is all about sausage, and you can use any kind you want. I'm using some good bulk italian flavored sausage that I like. You can use spicy or mild. You could use smoked links. That's up to you. The main thing is you wanna cook it up nice and crisp and brown. So it has great flavor and is hot going into that sandwich. [MUSIC] So we're cooking this on sort of medium high heat. Cuz we want the sausage cooked quickly and get nice and brown. We wanna avoid staining, so don't crowd the pan. Make sure you work with a pan that's big enough to hold the sausage in a single layer, and don't break it up. [MUSIC] Got our nice toasted boats, and I've got a little mayonnaise here that we've jazzed up with some fresh jalapenos, lime juice, a little cayenne pepper. And we're just gonna spoon a goodly amount, this into the bottom. And now we'll put our sausage straight from the skillet into the buns. It's got some really finely shredded green cabbage. We're gonna add to that some finely diced jalapeno. You can leave the seeds in if you want it spicy, a little salt, a little pepper and a good squeeze of lime juice and toss that together. [MUSIC] So top it off with a little bit of our dressed cabbage and eat it while it's hot. And there you have it, hearty sausage sandwich, a really fast week night meal. [MUSIC] [BLANK_AUDIO]
