Potluck Perfect Dessert: Strawberry and Rhubarb with Cheesecake Cream

This layered dessert uses the classic combination of strawberry and rhubarb in an easy shareable treat. So why not whip up this delicious strawberry rhubarb cheesecake parfait. In a medium bowl, stir together 3 cups of chopped fresh rhubarb, 2 cups of fresh strawberries and a 1/2 cup of strawberry jam. Let the mixture stand at room temperature. Meanwhile, make the cheesecake mixture. In a large mixing bowl, beat together 8 ounces of softened cream cheese, a 1/2 cup of sugar and 2 teaspoons of vanilla extract until the sugar dissolves. Increase the speed to medium and gradually add 1-1/2 cups whipping cream. Beat until the mixture is light and fluffy and then set it aside. Now, put the parfaits together. In an 8 ounce canning jar, alternately add the strawberry rhubarb and cheesecake mixtures. This will make about 8 parfaits. Serve this layered dessert right away or cover and chill for up to 24 hours. It doesn't get much easier than this strawberry rhubarb dessert in a jar.
