Dinner Tonight: Easy Beef Taco Pie

Rethink family night with this tasty beef taco pie. It's super easy to make, and it will feed a crowd. Let's get started. First, brush a [unk] tri plate with olive oil and spread a large spoonful of diced tomatoes in the bottom of the dish. Arrange four 6-inch flour tortillas on top of the tomatoes and up the sides of the plate, overlapping if necessary. Then, set aside. For the filling, in a skillet, cook 12 ounces of ground beef, one chopped onion, and one chopped sweet pepper over medium heat until the meat is brown. Then, drain off the fat. Add one teaspoon of chili powder, 1/4 teaspoon of cinnamon. Cook and stir for one minute. Stir in about half the remaining diced tomatoes. Bring the mixture to boiling, then reduce the heat and cook uncovered for two minutes. Time to assemble our pie. Spoon the beef mixture over the tortillas and tomatoes. Cut two more flour tortillas into large strips, layer them over the beef mixture, and sprinkle with 4 ounces of shredded cheddar cheese and remaining tomatoes. Bake uncovered in a 400-degree oven for 20-25 minutes. Remove from the oven and let it stand for five minutes. To serve, cut into wedges on top of the little fresh cilantro. This is one fun weeknight dish the whole family will love.
