In a medium bowl, add 1 cup of all-purpose flour, a half cup of yellow corn meal, 2 tablespoons of sugar, 2-1/2 teaspoons of baking powder, and a half teaspoon of salt. Stir all of this together. Then in a separate bowl with 2 more eggs, add 1 cup of milk and a quarter cup of vegetable oil or melted butter. Use a whisk to blend this together. Stir this mixture into the dry ingredients. Fold the scrambled eggs. Add a half cup of shredded cheddar cheese into the muffin batter. Spoon the batter into the muffin cups. Lastly, top each muffin cup with 1 piece of the bacon. Bake the muffins for 15 to 17 minutes or until they're light brown And toothpick inserted into the center comes out clean. Set the muffin tin on a wire rack and let the muffins cool in the pan for 5 minutes then run a small table knife or metal spatula around the inside edges of the cups to loosen the muffins from the pan. Remove the muffins from the pan and serve them warm with a little drizzle of maple syrup if you like. Bacon and eggs and sweet morning muffins all in one. How can you top that?
