The End of Boring Chicken: Easy Chicken Tetrazzini
Your family will love this easy slow cooker dinner! Just mix chicken, mushrooms, alfredo sauce and parmesan cheese for a rich and creamy weeknight meal.
Chicken tetrazzini is a popular comfort food-- chicken braised in a creamy mushroom sauce with plenty of Parmesan cheese over pasta. This version is made in the slow cooker, which makes it incredibly easy and hands-off. First, in a 3-1/2 or 4-quart slow cooker, put 2-1/2 pounds of skinless boneless chicken thighs or breasts that you've cut into one-inch chunks. Plus, two 4-1/2 ounce drained jars of sliced mushrooms. Next, in a medium bowl with a 16-ounce jar of Alfredo pasta sauce, add one quarter cup of chicken broth or water along with two tablespoons of sherry. This adds great depth of flavor. But you can skip it if you like. Also add a quarter teaspoon of ground black pepper and a quarter teaspoon of ground nutmeg and stir it all together. Pour this sauce over the chicken Stir 2/3 cup of grated Parmesan cheese into the sauce, and then, top the pasta with the sauce. Just before serving, garnish each portion with a little pinch of black pepper and thinly-sliced green onion. You'll need about 3/4 of a cup total. If you like, serve the tetrazzini with French bread slices on the side to help soak up the delicious sauce.
