Place a 12-ounce package of semi-sweet chocolate pieces into a heavy medium saucepan. This dessert is all about pure chocolate flavor. So, using a finer quality chocolate really makes a difference. Add one cup of whole milk, and a half cup of sugar. Cook the mixture over medium heat, stirring constantly until it comes to a full boil and thickens. This will take about ten minutes. Place three eggs in a medium bowl, and lightly beat them. Gradually stir about half of the chocolate mixture into the eggs. Add the egg mixture to the remaining chocolate mixture in the saucepan and cook it over low heat, stirring constantly for two more minutes. Remove the pan from the heat and add two tablespoons of orange liquor and two tablespoons of brandy. Stir them into the mousse. You can skip the brandy and liquor if you'd like, by substituting one quarter cup of milk. Pour the mousse into six to eight pots de crème cups or small dessert dishes. Cover them and chill the mousse in the refrigerator for four hours. When it's time to serve them, you can top the mousse with a dollop of whipped cream or a dessert topping.
