The Ultimate Make-Ahead Breakfast: Chicken Sausage Breakfast Casserole

-Want a healthy breakfast that's also easy and hands off? Try this chicken sausage breakfast casserole made in your slow cooker. The egg casserole is studded with sweet potatoes, red peppers, cheese, and of course mild chicken apple sausages for a hearty 1-dish meal. First, coat a 3-1/2 or 4 quart slow cooker insert with nonstick cooking spray and set it aside. In a large nonstick skillet, heat 1 tablespoon of olive oil over medium high heat. Now add a 12-ounce package of smoked cooked chicken and apple sausages that you've cut into bite size pieces. Cook the sausage until it's brown. It will take about 6 to 8 minutes. Now add 1-1/2 cups of chopped, peeled sweet potato. That's about 1 potato's worth, plus 3 quarters of a cup of chopped red bell pepper, about 1 medium pepper, and 1/3 cup of chopped onion. That's about 1 small onion. Cook stirring occasionally until these vegetables are just tender. Another 3 to 5 minutes. Put the sausage and vegetables into the slow cooker insert. Now in a medium bowl, lightly beat 8 large eggs then whisk in a half cup of low-fat milk. Add a half cup of reduced fat cheddar cheese. Pour the egg mixture over the sausage in the slow cooker. Cover the slow cooker and cook on low for 2 to 2-1/2 hours or until eggs are set. Sprinkle the eggs with another quarter cup of the shredded cheddar and let it sit for 10 minutes before serving so the cheese can melt. A rich cheesy egg casserole that's also low in fat. That's something worth waking up for.
