Sandwiches Straight from the Slow Cooker: Fire-Roasted Tomato and Italian Sausage Grinders

-Sausage grinder sandwiches are always a crowd pleaser whether it's a tailgate party or just Sunday dinner. These fire roasted tomatoes and Italian sausage grinders have a little something extra. Since they're slow cooked in a fire roasted tomato sauce and then topped with roasted red peppers and melted provolone. Put 10 uncooked sweet or hot Italian sausage links in a 5- to 6-quart slow cooker. Add two 14-1/2-ounce cans of fire roasted diced tomatoes including the juices, one 28-ounce can of crushed tomatoes, 1 tablespoon of balsamic vinegar, 6 minced cloves of garlic, 2 teaspoons of crushed dried basil, 1 teaspoon of crushed dried oregano, 1/2 teaspoon of salt, 1/2 teaspoon of crushed red pepper, and 1 quarter teaspoon of ground black pepper. Stir the seasoning into the tomatoes. Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours. Once the sausages are cooked, assembling the sandwiches is a breeze. First, preheat the broiler and set an oven rack about 6 inches below it. Split 10 French-style buns or hoagie rolls and put the sausages on the bottom half of the rolls. Top each sausage with half a slice of provolone cheese and place the second half of the cheese on the top side of the roll. Broil the sausages on their buns for about 3 to 4 minutes until the cheese is melted and bubbly. Just before serving, top the grinders with drained roasted sweet pepper strips over the sausages. Serve the sandwiches with individual bowls of the reserved tomato sauce for dipping.
