Use Leftover Chicken: BBQ Chicken Quesadillas!

Opt for easy when it comes to dinner tonight -- this fast chicken recipe works great with leftover chicken and will please all the picky eaters at the dinner table.

-These quick barbecue chicken and cheddar quesadillas make an easy weeknight dinner and are a terrific way to use leftover chicken. To start, preheat the oven to 300 degrees then in a medium saucepan add 2 cups of the shredded cooked chicken (we're using thighs here), 1/2cup of bottled barbecue sauce, and 1 drained 4-ounce can of diced green chillies. Cook and stir it just until the chicken is heated through. Now coat four 8-inch flour tortillas on 1 side with nonstick cooking spray. Flip them sprayed side down on wax paper. Sprinkle each tortilla with 1 quarter cup of shredded extra sharp cheddar or Mexican blend cheese, keeping it only on one half of the tortilla. Divide the chicken mixture among the 4 tortillas, spreading it evenly over the cheese then fold the tortillas in half, pressing the tops gently over the filling. Now it's time to cook the quesadillas. Heat a large nonstick skillet over medium heat. Add the quesadillas 2 at a time and cook them over medium heat for 4 to 6 minutes, turning once until they're lightly browned on both sides. Place the first 2 quesadillas on a baking sheet and keep them warm in the oven while you cook the second two the same way. When you're ready to serve the quesadillas, cut each into 3 wedges. Serve them as you like with salsa, sour cream, guacamole, lime wedges, and sliced green onions on the side so everyone can garnish their own quesadillas.
