The Best Slow Cooker Side Dish: Loaded Creamed Corn with Tomato and Bacon

The name of this recipe says it all-- loaded creamed corn with tomato and bacon. Made in the slow cooker, this cheesy and delicious side dish serves a crowd, making it perfect for a picnic, a tailgate, or a holiday meal. You'll need a total of four thawed 12-ounce packages of frozen whole kernel corn and will add one package here to your blender. Add 1-1/2 cups of half and half or light cream. Cover the blender container and blend it until it's smooth. Pour the mixture into a 3-1/2 to 4-quart slow cooker. Add the other three packages of corn, then add a cup of chopped onion, one-half cup of freshly-grated Parmesan cheese, one quarter cup of butter that you've cut into small pieces, one teaspoon of sugar, one half teaspoon of salt, and one quarter teaspoon of ground black pepper. Stir all the ingredients together. Cover the slow cooker, and cook the corn on low for 3 to 4 hours or on high for 1-1/2 to 2 hours. Toward the end of the cooking time, place five slices of thick bacon in a skillet over medium heat and cook it until it's crisp, turning it once. And then, drain it on paper towels. After the bacon cools, break or cut it into one-inch pieces and set it aside. Sprinkle three quarters of a cup of shredded Monterey Jack cheese on top of the corn. You can use plain Monterey Jack or the variety with jalapeño peppers, whatever you prefer. Next, sprinkle on the bacon pieces. Cover the slow cooker for about five minutes to allow the cheese to melt. While the cheese is melting, to one half cup of chopped tomato in a small bowl, add two tablespoons of snipped fresh Italian parsley, one teaspoon of red wine vinegar, and one-eighth teaspoon of sugar. Stir it well. Spoon the mixture on top of the corn. Loaded creamed corn with tomato and bacon pairs well with grilled chicken or steak, burgers, sliced ham, and well, just about everything.
