Cute Cherry Dessert: Double Cherry Slab Pie

Today we're making and irresistible Double Cherry Slab Pie. This pie is filled with tangy sweet cherries wrapped in a tender, buttery crust. First, we'll make the pastry. In a large mixing bowl, combine 3-3/4 cups of flour, 2 tablespoons of sugar, and 1-1/2 teaspoons of salt. Using a pastry blender, cut in 3/4 cup of shortening and 1/3 cup of chilled butter chunks until the pieces resemble small peas. Sprinkle in 1 tablespoon of water over the flour mixture and toss with a fork. Push the moistened pastry to the side of the bowl and repeat moistening the flour mixture 1 tablespoon at a time until the flour mixture is moistened. Using your hands, gather and shape the mixture into 2 balls. One ball should be slightly larger than the other and contain about 2/3 of the pastry. Wrap each ball in plastic wrap. Let's get started on the filling. In a large bowl, add 5 cups of frozen, pitted, red tart cherries, 3/4 cup of dried tart cherries, 1 cup sugar, 1 cup corn flakes, and 1 teaspoon of finely shredded lemon peel. Stir to combine. Let the mixture stand about 20 minutes while you roll out the pastry. Between 2 pieces of lightly floured wax paper, roll the larger bowl of pastry to a 17 x 12 inch rectangle. Remove the top sheet of wax paper then transfer the dough to a 15 x 10 x 1 inch baking pan. Peel off the remaining wax paper and carefully press the pastry at the sides of the pan. Spoon the filling evenly over the pastry. Roll the remaining pastry between floured wax paper to 16 x 11 inch rectangle. Remove the top sheet of wax paper. Using a 2 to 3 inch heart shaped cutter, cut 3 or 4 hearts out of the dough and set them aside. Carefully invert the pastry over the pan with the filling and peel off the wax paper. Place the cut out hearts on top of the filling, overlapping as desired. Brush the pastry with a mixture of egg whites and water and sprinkle with coarse sugar. Transfer the pie to a 350 degree oven and bake for 45 minutes. Remove from the oven and cool completely on a wire rack. There you have it, one easy to make pie full of delicious sweet cherry flavor.
