Slow Cooker Chicken with Greek Yogurt
Wonderfully seasoned chicken breast is cut-with-a-fork tender when you make it in the slow cooker. See our recipe in action, including a homemade Greek yogurt sauce.
Today we're making a flavorful and healthy chicken dinner right in the slow cooker. It's full of bright flavors and served with a refreshing cucumber salad. Let's get started. First we'll make the rub for the chicken. In a small bowl, stir together half the minced garlic, one teaspoon of dried oregano, one teaspoon of shredded lemon peel, a quarter teaspoon of salt and a quarter teaspoon of pepper, rub this mixture over both sides of the chicken. Place the chicken in a slow cooker and pour the chicken broth down the sides of the cooker. You want to avoid washing away the seasonings, that's where all the flavor is. Cook on a high heat for two hours or low heat for four hours. Time to get started on the yogurt sauce. First, we'll shred about two tablespoons of the cucumber. In a medium bowl, combine the shredded cucumber, six ounces of plain fat-free Greek yogurt, one tablespoon of chopped mint and the remaining garlic. Season to taste with salt, cover the yogurt sauce and chill. Next, we'll make the cucumber salad. Slice or chopped the remaining cucumber. In a bowl, we'll mix the cucumber with two tablespoons olive oil and one tablespoon of lemon juice. Season to taste with salt and toss to combine. Cover the cucumber salad and chill. Remove the chicken from the slow cooker and discard the liquid. Serve the chicken with the cucumber salad and the yogurt sauce.
