Cookie Truffles: A Tasty No-Bake Candy Recipe
No oven time here -- these ridiculously tasty cookie truffles require just your stove top and some chill time. They'll soon be your favorite candy recipe.
These gorgeous cookie truffles may look store bought but they're actually homemade. This tasty candy recipe is a snap. The first step is to line a baking sheet with waxed paper and set it aside. In a heavy medium saucepan, melt 12 ounces of semi-sweet chocolate pieces over low heat. Off the heat, stir in an 8-ounce package of softened cream cheese that you cut up into smaller pieces. Stir the mixture until it's well combined. Next, stir in 8 ounces of miniature chocolate sandwich cookies with white filling that you finely chopped. Using a small cookie scoop, drop mounts of the mixture onto the prepared tray. Cover them and freeze them for 15 minutes or until they are firm. Now, in a small, heavy saucepan with 2-1/2 cups of milk chocolate pieces, add 2 tablespoons of shortening. Stir it over low-heat until the mixture melts and become smooth. Remove it from the heat. Next, line another baking tray with waxed paper. Using 2 forks, dip the frozen balls into the chocolate mixture, allowing the excess chocolate to drip back into the saucepan. Place the dipped balls on the tray. Chill them for about 30 minutes until they're firm. Store the cookies in a single layer in an air tight container in the refrigerator for up to a week or freeze them for up to a month. Let the cookies stand at room temperature for about 30 minutes before serving.
