5-Step Fancy Strawberry Souffle

If you are looking for an elegant dessert, this recipe for Strawberry soufflés maybe just the thing, airy and light, the soufflés are served in individual cups for a pretty dessert that sure to wow. You'll need 5 egg whites for this recipe. Let them stand at room temperature for 30 minutes. Meanwhile, you can prepare the dishes for the soufflé. You'll need 6 one cup soufflé dishes or 10 ounce custard cups. Use softened margarine or butter to grease the dishes. Then, sprinkle them with sugar. The sugar gives the soufflé something to cling to as it rises. Shake out any excess. Place the dishes on a baking pan and set them aside for now. Place 2 cups of sliced fresh strawberries in a medium bowl and add a quarter to a third cup of sugar, depending on the sweetness of the strawberries. Let the strawberries stand for 15 minutes until they become juicy. Pour the strawberries and liquid into the bowl of a food processor or blender and add 4 teaspoons of corn starch. Blend the mixture until its smooth. Set it aside for now. Pre-heat your oven to 350 degrees. Pour the egg whites into a large mixing bowl and beat them with an electric mixer on high until peaks form with tips that curl with the beaters are lifted. Gradually add a half cup of sugar and beat it until stiff, glossy peaks form about 2 to 3 minutes more. With a rubber spatula, push the beaten egg whites to the side of the bowl and then add the strawberry mixture into the opening. Carefully stir a little of the beaten egg whites into the strawberry mixture then gently fold the two together corking quickly and turning the bowl as you go. There can be a few cake streaks remaining. The goal is to not deflate the egg whites. Divide the mixture evenly among the prepared dishes and bake them for 15 to 18 minutes or until a knife inserted into the center of the soufflé comes out clean. Don't they puff up beautifully? The key to soufflés is to time them so they're served immediately. They're delicious as is or you can serve them with a little strawberry or chocolate flavored syrup. Just make a hole in the center with a spoon and drizzle the syrup inside. Perfect.
