Homemade Strawberry Ice Cream

This recipe for strawberry and cream cheese ice cream combines the sweetness of fresh strawberries with the subtle tang and richness of cream cheese for the ultimate frozen dessert. You'll begin by placing 2 cups of strawberries in a medium bowl. Mash them with a potato masher until they're crushed and set them aside for an hour. Place 4 ounces of softened cream cheese in a large mixing bowl and beat it with an electric mixer on medium to high speed until it's smooth. Add a half cup of milk and beat the mixture until it's just combined. Now, you'll add the mashed berries, another half cup of milk, 1 cup of whipping cream, half a cup of sugar, 1 teaspoon of vanilla, half a teaspoon of almond extract and, if you'd like, add a drop of red food coloring for that eye-appealing red. Beat the mixture until it's just combined. You'll need a 2 to 4-quart ice cream maker. Freeze the ice cream according to the manufacturer's directions. This recipe makes a quart of ice cream or 8 servings. When the ice cream is ready, scoop some into a dish and sprinkle it with some finely chopped toasted almonds.
